Ingredients;
Handful of cauliflower
Handful of aubergine
Handful of white cabbage
Handful of carrots
Handful of green beans
Handful of eddoes
Handful of potatoes
Handful of mooli
3 tbs oil
Chilli powder to taste
1½ tsp cumin powder
Salt to taste
2 tsp turmeric powder
1 tsp panch phoran
2 bay leaves
Green chillies
Method;
Add 3 tbs of oil to a pan on medium heat
Add in panch phoran and bay leaves
Once it starts to sizzle add in the potatoes, mooli, carrots, white cabbage, green beans, eddoes, cauliflower, aubergine and mix, leave for 2 minutes while stirring in between
Add salt to taste, 1½ tsp of turmeric powder, cumin powder and ½ tsp of chilli powder (this can be altered depending on spice required) and mix well so the spices are coated
Once everything is mixed, cover and leave on medium heat for around 10 minutes
Uncover and stir, add in some green chillies and cover again for 6 minutes
Uncover, stir and serve
Can be eaten with rice, naan or chapatis
